After a decade and a half of dedication to Himalayan Crystal Salt, we have now found an alternative that we like even more.... Allow me to introduce you to Western Australian Lake Salt.
This salt is harvested annually from Lake Deborah, a natural salt lake 500km inland from the southern(ish) WA coastline. Lake Deborah has evolved over 5 million years from westerly winds bringing dissolved salt from the Indian Ocean and depositing them in river valleys. The salt deposits are free from all modern pollutants, created by the natural rhythms of Wind, Rain and Sun.
Each winter the annual rains dissolve some of the lake's crust and draws brine to the surface.
Each summer the sun evaporates the brine, revealing a new crop of salt crystals on the surface of the lake.
The crystals are harvested from the lake's surface and washed near the shore before transportation.
Lake Deborah was recognised as a significant natural resource by the Western Australian Government, who declared is a Salt Harvest Sanctuary in 2012.
The sheer remoteness of the lake coupled with its natural seasonal rhythms and harvesting makes it the cleanest, purest, most ethically and environmentally sound choice in the wide range of salt options available to us today.
