HOW WALNUTS ARE MEANT TO TASTE....

I have been running our stall at the Gold Coast Organic Markets for nearly 14 years now (I am staggered when I say that number!! Can it really be that long???). One of the common conversations I have is with customers who say "I don't like walnuts - they're too bitter". At which point I say "Aaah, well you really have to try one of these then because this is what walnuts are meant to taste like!". (And the story generally ends with some shock and the customers buying some walnuts!)

Walnuts are only ever bitter when they have not been stored properly. The bitterness is not the nut - it is rancid oil. The natural and healthy oils in walnuts are more fragile than most nuts, because of the particular balance of omega-3 and omega-6 fatty acids. This means that when raw walnuts are stored at room temperature for lengthy periods the oils are 'denatured' (meaning some of the hydrogen bonds break), making them bitter and rancid. Raw walnuts (and all raw nuts) need to be kept in cold storage at all times.

After activating the oils are stabilised and they can handle room temperature without going rancid.

Unfortunately we cannot source affordable certified organic Australian walnuts, but these are from California, are raw and unpasteurised and have been transported and stored in temperature controlled environments all the way. We store in our cool room, activate according to our unique process, and the result is the best tasting walnuts you will find!
