My favourite kind of sweetish snacks are nutty bars with chocolate involved somehow. This Choc-Nut Slice falls perfectly into that category. They get extra points for being incredibly simple to make with minimal ingredients, and tasting amazing at the end.
Thanks for the original recipe from wholefoodmama.
Ingredients:
For the base:
16 medjool dates, seeds removed
1 Cup Totally Nuts activated almonds
3 Tbs coconul oil, melted
50ml water (approx)
1 tsp cinnamon
1 tsp vanilla
pinch of salt
For the chocolate topping:
115g cacao butter
45g cacao powder
80g coconut sugar
1 tsp vanilla
Instructions:
1. Line a 20x20cm baking tray with baking paper and heat over to 180 deg.
2. Put all base ingredients EXCEPT water in a food processor.
3. Gradually add the water until you reach a consistency of a chunky thick ball.
4. Spread onto the lined baking tray. (It’s easier if you wet your hands, spatula or the bottom of a spoon).
5. Bake for 30 mins or until the top is solid to touch. Cool completely.
For the chocolate topping:
1. Add the cacao butter into a ceramic or glass bowl placed over a pan of just simmering water.
2. Whisk in the cacao powder and coconut sugar.
3. Add vanilla.
4. Pour chocolate over the cooled base and place in the fridge until set.
5. Cut into slices and enjoy!
