Minerals: Pistachios are an excellent source of magnesium, phosphorus and vitamin B6. They also contain high amount of copper, which is an important mineral in helping us absorb the iron that is in our food.
Anti-oxidants and Eye Health: Pistachios also contain many anti-oxidants. In particular they are high in the anti-oxidants lutein and zeaxanthin, which according to the American Optometrist Association help reduce the chances of developing eye conditions such as cataracts and age-related macular degeneration (AMD).
