Almond Coconut Granola Bars

Almond Coconut Granola Bars

This is a delicious granola bar recipe. It does use oats, so if your preference is to stay away from all grains then substitute for something else or go for gluten-free oats.

Either way, give this a try for a very simple high-protein healthy bar. This recipe is adapted from cookieandkate

Ingredients:

1 C Totally Nuts Almonds

1.75 C rolled oats

1 C coconut flakes

1/2 tsp ground cinnamon

 1/2 tsp salt

1 C Totally Nuts Almond Butter/ Almond Coconut Butter

1/2 C honey or maple syrup

1 1/2 tsp vanilla

Instructions:

1. Line a 9 inch square tin with baking paper.

2. Add almonds, oats, coconut, cinnamon and salt to a mixing bowl and mix well.

3. Add the nut butter, honey and vanilla to a separate bowl and whisk until well combined. (You can gently heat the mixture if it proves tricky to mix).

4. Add the liquid ingredients to the dry bowl. Mix thoroughly until they are evenly combined and no dry oats remain. The drier the mixture, the crunchier the bars, so add extra oats if it seems dry.

5. Transfer mixture to your prepared tin. Pack it down evenly and firmly (use something like the bottom of a glass to push down on. If it sticks, cover with a bit of baking paper or dampen it slightly).

6. Cover and refrigerate for at least an hour - preferably overnight.

7. When ready, remove from the pan and slice and enjoy!
