This recipe is adapted from Natural Health Magazine. I do not agree with excessive heating of nuts and seeds, because it impacts the integrity of their fats and proteins. But then again, there are times when a little compromise goes a long way...!
Ingredients:
2 C (300g) Totally Nuts Sesame Seeds
1/3 C (100g) Totally Nuts Pumpkin Seeds
1/3 C (100g) Totally Nuts almonds
1 C (250ml) honey or rice syrup
1 tsp cinnamon
Method:
1. Prepare two sheets of greaseproof paper.
2. Blitz the almonds and pumpkin seeds briefly in a food processor to break them up a bit.
3. In a saucepan, heat the honey (or rice syrup) with the cinnamon until boiling gently.
4. Add the almonds and seeds to the hot liquid and continue to heat, stirring vigorously with a wooden spoon until it clumps together.
5. Place mixture on one sheet of greaseproof paper, cover with the other one, and roll it flat with a rolling pin.
6. Remove the top sheet of paper and allow to cool slightly before cutting into pieces. Do not let it cool too much or it will be too hard to cut.
7. NOTE: You can add more honey for a chewier sweeter bar, or less for a not-so-sweet crunchier bar.
