This recipe for Chocolate Almond Butter Thumbprint Cookies is from lifemadesweeter.com and is a totally delicious cross between a chocolate biscuit and a jammy thumbprint biscuit. In the US it seems to be a healthy version of a ‘kiss’ cookie, but personally I have no idea what that is!
Feel free to sub pretty much any nut butter – but I do think the almond based ones work better here.

Ingredients: 1 C Totally Nuts Almond Butter
1 egg
1/2 C coconut sugar
2 Tbsp almond flour
1 tsp vanilla extract
pinch of salt
1/2 tsp cinnamon
1/2 C quality chocolate chips

Instructions: 1. Preheat oven to 180 degrees and line a backing sheet with baking paper.
2. Either in a food processor or by hand in a large bowl, combine egg, almond butter, sugar and vanilla until smooth. Then add almond flour. salt and cinnamon.
3. Roll into balls and make a thumbprint in the centre.
4. Bake for 9-10 mins, until just slightly browned on the bottom. Place the choc chips into the indents after the biscuits have cooled just slightly.
