The first thing you'll notice about our organic activated Pumpkin Seed Butter is it is seriously green. A delicious, rich, deep thorough and total green that leaves you wondering how on earth it can be so very very green. The answer? Because there is nothing in there but our Styrian Pumpkin Seeds. These are seeds of a traditional variety of pumpkin grown in the Styrian region of eastern Austria (and into Slovenia). They are darker in colour than the regular pumpkin seeds that generally come from China, which is why they are also known as 'black pepitas'. The darker colour is actually the outer coat of the seed. In this pumpkin variety the seed coat is reduced to such an extent that we can eat and digest it. This increases the nutrient density of the seeds enormously, and also gives the fantastic colour.
Once you have been captivated by the colour and are ready to move on, you may be wondering what to do with it. Here are some suggestions:
- Spread lavishly on celery sticks.
- Ditto on slices of apple.
- And once more, on slices of banana.
- Add a spoonful to your breakfast oats.
- Add at least a spoonful to you smoothie.
- Use as a dip. Mix in some extra olive oil, lemon juice, garlic and herbs to add flavour and get to dipping consistency.
- Add a spoonful to yoghurt.
- Delicious salad dressing - simply mix olive oil, white wine vinegar (or balsamic - which makes for a great taste but the colour can be slightly off-putting!) and a little Dijon mustard with a generous dollop of Pumpkin Seed Butter.

Pumpkin Seed Butter will also work in any recipe that calls for Peanut Butter - simply do a straight substitute. It will give you a far more nutritious and tasty (and greener!) result.
