Almonds are such a staple in life generally, and your pantry in particular. They are packed with protein, vitamin E and a host of other nutrients including quality fats and antioxidants. Almonds are also the easiest nuts, and nut butter, to include in many recipes ranging from bliss balls and cookies to curries, salads and Middle Eastern dishes. Which is why we have another delicious recipe for you today!
The recipe is taken from Bake it with Love. It calls for Almond Butter, but you could easily substitute Almond Coconut, Cashew, Cashew Coconut or Sunbutter.
Ingredients:
1 C Totally Nuts Almond Butter
1 C organic sugar or rapadura (Optional - plus extra for rolling)
1 large egg (can sub for vegan egg replacement if required)
3 Tbsp Honey
1 tsp Almond extract
2 Tbsp almond flour
Instructions:
- Preheat over to 175 degrees and line a baking sheet with parchment paper.
- Combine all ingredients EXCEPT almond flour in a bowl until smooth, then add the almond flour and mix until fully incorporated into the dough. Note that it will be a bit dry.
- Roll spoonfuls of the dough into balls. If desired, roll the balls in a small dish with the extra sugar.
- Place the dough balls onto the baking sheet, leaving a good couple of inches between them. Use the tines of a fork to press down on the dough balls to make a crossed pattern on the top.
- Bake in the oven for 8-10 minutes or until golden brown and no longer looking wet.
- Allow to sit on the baking sheet for 2-3 minutes before transferring to a wire cooling rack.
