These are a fantastic, super simple and tasty protein-rich snack. I recommend even adding some Hemp Seeds in to the mixture - just a tablespoon or two - for extra protein and to make them even more satisfying and filling...

Ingredients:
1C dates
1C Totally Nuts Activated Cashews
1C unsweetened coconut
1/2 tsp vanilla
1/4 tsp Himalayan Crystal Salt or Celtic Sea Salt
2 Tbsp Totally Nuts Activated Cashew Butter (or any other nut butter)
(Optional: extra dessicated coconut or chopped cacao nibs)
Instructions:
1. Process dates in a food processor until in pieces.
2. Add coconut, cashews, vanilla and salt and process until the mixture is well combined and smooth.
3. Add the cashew butter and process again until the mixture comes together in a ball.
4. Use a 1Tbsp measuring spoon or an ice cream scoop (or your fingers!) and roll the mixture into balls.
(5. Optional: Roll the balls in some coconut or chopped cacao nibs for a bit of extra taste!)
6. Chill for at least one hour before eating.
