This is a delicious recipe taken from the Australian Macadamias website - a treasure trove of all things Macadamia!
Ingredients:
300g pitted dates, roughly chopped
2 tbsp coconut oil
3/4 C Totally Nuts Macadamias
3/4 C dried apricots
3/4 C (about 100g) dried figs - chopped if they are large
Instructions:
1. Line a 20cm x 10cm loaf tin with baking paper.
2. Combine dates and coconut oil in a medium saucepan or frying pan and stir over medium heat until the oil is liquefied. Reduce the heat to low and cook, stirring occasionally, until the dates are soft.
3. Remove from the heat and cool slightly until it is not too hot to touch. Place in a bowl with the remaining ingredients and stir to combine.
4. Use your hands to thoroughly combine the mixture and then press tightly into the prepared tin.
5. Allow to cool completely in the tin before slicing to serve.
6. Store in the fridge for 2-3 weeks.
