This is a fantastic recipe for healthy chocolate nut bars with lots of healthy fats, protein and it also ticks all sorts of boxes:

I took it except for the chocolate topping which is my usual chocolate recipe) from a book “Super Low-Carb Snacks : 100 Delicious Keto and Paleo Treats for Fat Burning and Great Nutrition” and it was a winner with all members of our family and visitors as well! I have also renamed it – the original name was “Supersmart bars” – which sounds good, but does not tell you much about the recipe – which is, after all, for Chocolate Nut Bars!

Ingredients:
120g Totally Nuts walnuts
110g Totally Nuts cashews
80g Shredded coconut
175g Totally Nuts cashew butter*
90g coconut oil
100g Xylitol/ coconut nectar
1 Tbsp Vanilla
1/2 tsp salt
1 quantity chocolate recipe
* you can substitute any nut butter<
Instructions: In a food processor, first mix the nuts so they are chopped very fine. Then add all the other base ingredients (everything except the chocolate) and blend until combined. Press into a lined 20 x 20cm dish until flat and even. Refrigerate for 30-60 minutes.
Make the chocolate. When the base is cool, pour the chocolate on top.
Refrigerate until set.
