I love this recipe because it can jazz up anything from chicken to fish to cauliflower. And there is nothing that doesn't get a whole load better by adding a lot of macadamias and fresh herbs!

Ingredients:
1 cauliflower (Sub: fish/ chicken/ pumpkin)
1/3C fresh parsley (finely chopped)
2 Tbsp fresh thyme leaves
2 clovers garlic (finely chopped)
1 tsp lemon zest
3 Tbsp macadamia oil
Seasoning to taste
Instructions:
Prepare cauliflower steaks or fish or chicken fillets.
Place all crumb ingredients (macadamias, herbs, garlic, lemon) and 1 Tbsp of the oil into a food processor and blend to a fine crumb. Season to taste.
Place the cauliflower/fish/chicken on a lined baking tray and drizzle with remaining oil.
Generously spoon the crumb over the prepared steaks.
Bake for 20-25 minutes or until the cauliflower/fish/chicken is cooked
