SIMPLE WALNUT BISCUITS

SIMPLE WALNUT BISCUITS

I confess to a love of biscuits - especially ones that are dunkable in tea. And especially home-made ones. And especially ones that are healthy and wholesome. These walnut biscuits check all of those boxes and more. Super simple to make, delicious and more-ish.

This recipe is taken from Zara Cooks.

Ingredients:

1 1/2 C Totally Nuts Walnuts

1/2 C Rapadura or other sweetener

2 egg whites (but only use 1 1/2 - make some home made mayo with the yolks!)

Zest of 1 orange (or sub with vanilla, lemon zest or cinnamon...)

16 walnut halves for garnish

Instructions:

1. Preheat oven to 175 Deg C and line a baking sheet with parchment paper.

2. Blend walnuts in a food processor until you get to a flour-like consistency.

3. Combine walnut flour, rapadura, orange zest or alternative flavouring in a large mixing bowl.

4. Separate the egg whites and in a different bowl, beat until they form stiff peaks. Then gently fold into the flour mixture until fully combined.

5. Let the mixture sit for 15 minutes then shape into small balls and place on the baking sheet. 

6. Bake for 15-20 minutes until golden brown.

7. Allow to cool on a wire rack before digging in!

8. (can store in an airtight container at room temperature for up to a week).
